[Video recipe] Molting crab tempura

Ingredients for 2 people
  • 4 moulting crabs
  • 2 eggs
  • 100g wheat flour
  • 50g of panko
  • 1 tsp black pepper
  • 1 teaspoon of salt
  • Vegetable oil

Preparation
  • Defrost 4 molted crabs
  • Then prepare the crabs by removing the ventral part and the gills using a pair of scissors.
  • In a bowl, prepare the breading by mixing the wheat flour with the panko, salt and pepper
  • In another bowl, beat two whole eggs to make the glue
  • Place the crabs in the egg glue then in the breading. Dab off excess breading
  • Heat a large volume of vegetable oil.
  • When the oil is hot, carefully place the breaded molted crabs then fry on each side for about 2-3 minutes until you obtain a nice golden color
  • Dress
