Here is his recipe for Moult Crab sautéed with ginger and green onions that he created with the moulting crabsExostar :
In French:
Ingredients:
- 8 moulting crabs
- ½ cup cornstarch
- Oil, for frying
- 3 tablespoons of oil
- 8 shallots, white and green separated, cut into tubes
- 1 tablespoon finely chopped ginger
- Sauce: 3 tablespoons oyster sauce, 1 tablespoon light soy sauce, 3 tablespoons water, 9 turns white pepper, 1 teaspoon cornstarch, 1 teaspoon sugar, 1 tablespoon sesame oil
Steps:
- Place the cornstarch in a large bowl, dipping the crab to coat it well.
- Heat the oil to 200°C, immerse the crab, fry it until it turns bright red, drain on absorbent paper
- Repeat steps (1) and (2) until all crabs are fried, set crabs aside
- Heat the oil, add the white shallots and ginger, sauté for 5 minutes
- Add the crabs and green shallots
- Add the sauce, let it thicken
- Arrange the serving plate with ginger and shallots topped with crabs. Enjoy your food !
