Lightly floured then plunged into a bath of hot oil, these little fish transform into golden, crispy bites in just a few moments. Served with a wedge of lemon and a pinch of salt, they will delight young and old alike. It is also an ingredient of choice to enhance Asian-style soups or omelettes.

Preparation suggestion (Classic frying):

 

  1. Defrost the blanchaille and dry it gently with absorbent paper.

  2. Lightly coat the fish in flour.

  3. Fry them in hot oil (around 180°C) for 2 to 3 minutes, until they are golden brown and crispy.

  4. Drain them on absorbent paper, add salt, and serve immediately with lemon wedges.

  • I tasted it but I admit that my preparation (sautéed + garlic butter and parsley) could be improved. I probably overcooked them a little. One or two recipes would be appreciated. Thank you
