Cochinchina Momordique is a rare plant native to South Asia. Its fruits are edible, bright orange in color and ovoid in shape covered with semi-soft thorns. In Southeast Asia, its fruits are used in Asian recipes for their nutritional values.
However, it is not recommended to consume it as is because this fruit is very bitter. It is after cooking that its taste becomes soft, sweet and slightly tangy. When young and tender, it is a staple in many Indian dishes. In Vietnam, it is rather used as a coloring for rice which gives it a red-orange color.
