Preparation: Rinse the fish lightly in cold water to separate them (complete defrosting is not required, but it is best to pat them dry carefully on paper towels to remove excess water).

Coating: Generously roll the small fish in wheat flour or very fine breadcrumbs. Remove the excess by passing them through a strainer.

Cooking: Immerse them in a very hot oil bath (180°C) for 2 to 3 minutes, until they are golden brown and crispy.

Services: Drain them on absorbent paper, immediately add salt and serve very hot with fresh lemon wedges and tartar or aioli sauce.
