Imperial shrimp ravioli are small tapioca ravioli with shrimp that in Vietnam are called Bánh Bột Lọc. The ravioli is often wrapped in a banana leaf for steaming. Tapioca flour is translucent and elastic, which may surprise you if you've never tasted it.
The Bánh bột lọc is a traditional Vietnamese specialty. In the authentic recipe, the shrimp used is whole, with its shell, because it becomes tender after cooking and is totally edible.
