The moonlight of Cochinchine is a rare plant from South Asia. Its fruits are edible of bright orange color and ovoid shape covered with half-soft spines. In Southeast Asia, its fruits are used in Asian recipes for their nutritional values.
However, it is not recommended to consume it as it is because this fruit is very bitter. It is after cooking that its taste becomes gentle, sweet and slightly acidulated. When they are young and tender, it is a basic element in many of Indian dishes. In Vietnam, it is rather used as a dye for the rice that gives it a red-orange color.
